There's another video floating around like that where a kid does the whole deer including cutting off all 4 legs in about 2 minutes. Super fast, but not my style.

That's exactly how I and all my buddies skin our deer. Never thought of using my elbow though. Good idea.

That is how the pros skin, well sort of... If you do it that way there will be a bunch of hair on the meat, because its contantly falling off the remaing head and neck. You will constantly be trying to clean it up and there is a good chance you will have hair in your final product. I saw of the back legs below the hocks and skin the end stumps removing the stinky hock glands, then hang them by the hock tendons and skin like the guy in the vid. This way there is no hair ever falling down on the carcass. No ever touches the meat if you do it right. No Hair makes a nice clean professional appetizing job.
